  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper

  • 1 teaspoon Sweet Paprika

  • 2 tablespoons Olive Oil Extra virgin preferred
  • 1 tablespoon Unsalted Butter
For the Sauce
  • 1 medium Shallot Chopped
  • 2-3 cloves Garlic Mince
  • 0.5 cup Dry White Wine Pinot Grigio or chicken broth
  • 1 teaspoon Dried Basil
  • 1 tablespoon Tomato Paste
  • 1 cup Chicken Broth Low-sodium preferred
  • 1 can Canned Cherry Tomatoes With juices
For the Finishing Touches
  • 1 cup Fresh Basil Leaves Garnish
  • 8 ounces Mozzarella Balls Fresh preferred
  • 0.5 cup Grated Parmesan Optional
  • 1 teaspoon Crushed Red Pepper Flakes Optional

  1. Prepare the ingredients: Mince the garlic, chop the shallot, and cut the mozzarella into cubes. Preheat a skillet over medium heat.
  2. Season the chicken: Coat both sides of the chicken fillets with salt, pepper, garlic powder, and paprika.
  3. Brown the chicken: In the skillet, heat olive oil and butter, and cook the chicken for about 5 minutes on each side until golden brown.
  4. Sauté aromatics: Add the minced garlic and shallot to the skillet and sauté until fragrant.
  5. Deglaze the skillet: Pour in white wine to deglaze, scraping up any brown bits, and simmer for 2 minutes.
  6. Create the sauce base: Stir in salt, pepper, dried basil, and tomato paste; cook for an additional minute.
  7. Add liquid ingredients: Add chicken broth and cherry tomatoes, bring to a boil, then reduce to a simmer for 5 minutes.
  8. Finish the dish: Nestle the chicken back, top with basil and mozzarella, simmer until melted, or bake at 400°F for 10 minutes.
  9. Serve and enjoy: Plate the chicken with sauce and sides like pasta or ciabatta.
