  2. Wash your zucchini thoroughly and dry them well. Trim the ends and slice them in half lengthwise. Make shallow diagonal cuts in the insides.
  3. In a medium bowl, combine olive oil, minced garlic, salt, black pepper, and dried herbs. Whisk until combined.
  4. Arrange zucchini halves cut-side up in a baking dish and brush with the garlic mixture.
  5. Sprinkle grated Parmesan cheese over each zucchini half evenly.
  6. Roast for 25–30 minutes until cheese is bubbling and golden brown.
  7. Remove from the oven and let cool slightly. Garnish with chopped parsley before serving.
