Step-by-Step Instructions
  1. Wash and dice the red bell pepper and half a purple onion. Grate about a cup of cheddar cheese. If using canned corn, drain it, or use fresh corn cooked for 2-3 minutes. Gather a large mixing bowl.
  2. Gently crush the bag of Chili Cheese Fritos to your desired chunk size. Set aside.
  3. Combine the corn, diced bell pepper, purple onion, and cheddar cheese in the mixing bowl. Stir gently to mix well.
  4. Keep the mayonnaise separate until ready to serve to maintain the Fritos' crunch. Store covered.
  5. Add mayonnaise to the mixed salad when ready to serve. Gently fold together until even coated and serve immediately.
