Ingredients

For the Salad
  • 1 bag Coleslaw mix A crunchy base for texture and volume; swap with finely shredded fresh cabbage for a lighter option.
  • 1 can Black beans Adds protein and heartiness; use pinto beans if you're looking for a tasty variation.
  • 1 can Canned corn kernels Offers sweetness and crunch; feel free to substitute with fresh sweet corn or frozen corn.
  • 1 Jalapeño pepper Delivers spice and depth; adjust according to your desired heat level or omit for a milder taste.
  • 1 Red bell pepper Contributes vibrant sweetness and color; yellow or orange bell peppers make great alternatives.
  • 4 Green onions Adds freshness and a mild flavor; chives can offer a subtler taste if preferred.
  • 1/4 cup Cilantro Enhances flavor with herbaceous notes; parsley can be a lovely substitute for those who prefer it.
For the Dressing
  • 1/2 cup Sour cream Provides creaminess and tang; Greek yogurt can be a healthier option to consider.
  • 1/4 cup Mayonnaise Contributes richness; plant-based mayo works well for a vegan variation.
  • 2 tbsp Fresh lime juice Offers a bright, zesty acidity; bottled lime juice or lemon juice can be used if needed.
  • 1 tbsp Chipotle sauce Adds a spicy, smoky element; adobo sauce is a great alternate for that same kick.
For the Toppings
  • 2 cups Chili Cheese Fritos The star ingredient that adds crunch and flavor; opt for plain corn chips to keep it gluten-free.
  • 1 tsp Taco seasoning Imparts a delicious blend of spices; try making your own for a personal touch.
  • 1/2 tsp Ground cumin Provides earthy depth; feel free to reduce or omit if you don't have any on hand.
