Step-by-Step Instructions
  1. Wash cucumbers and tomatoes under cool water. Slice cucumbers into thin 1/4 inch rounds and chop tomatoes into wedges. Thinly slice red onion.
  2. Place sliced cucumbers in a bowl and sprinkle with salt. Let sit for about 10 minutes, then pat dry with a paper towel.
  3. In a large mixing bowl, combine the dry cucumbers, tomato wedges, sliced red onion, and chopped parsley. Gently fold together.
  4. Drizzle with olive oil and lemon juice, and season with salt and black pepper. Mix to enhance flavor and sheen.
