Method
 

Step-by-Step Instructions
  1. Preheat your oven to 275°F (135°C) and place a parchment-lined baking sheet inside to keep kababs warm.
  2. Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes, then place in the warm baking sheet in the oven.
  3. In a medium bowl, whisk together the eggs, heavy cream, vanilla extract, and ground cinnamon until smooth.
  4. Melt butter in the same skillet over medium heat until bubbly but not browned.
  5. Toss half of the brioche bread cubes in the egg mixture until well-coated and allow excess to drip off.
  6. Cook the bread cubes in the skillet for 2-3 minutes on each side until golden brown, then transfer to the warm baking sheet.
  7. Repeat with the second half of the bread cubes, using the remaining butter for cooking.
