- Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes, then place in the warm baking sheet in the oven.
- In a medium bowl, whisk together the eggs, heavy cream, vanilla extract, and ground cinnamon until smooth.
- Melt butter in the same skillet over medium heat until bubbly but not browned.
- Toss half of the brioche bread cubes in the egg mixture until well-coated and allow excess to drip off.
- Cook the bread cubes in the skillet for 2-3 minutes on each side until golden brown, then transfer to the warm baking sheet.
- Repeat with the second half of the bread cubes, using the remaining butter for cooking.
