Step-by-Step Instructions
- Begin by grinding the oats into a fine flour using a food processor, blender, or nut grinder. This should take about 1-2 minutes, ensuring a smooth consistency. Set aside in a mixing bowl.
- In the bowl with your oat flour, add a pinch of baking powder or baking soda and a sprinkle of salt. Whisk these dry ingredients together for about 30 seconds until well combined.
- In a separate bowl, crack two eggs and whisk them with around ¾ cup of milk or water and a teaspoon of vanilla extract until well blended.
- Gradually pour the wet ingredients into the bowl with the dry ingredients, stirring gently. Mix until smooth and ensure there are no lumps.
- Preheat a non-stick skillet or griddle over medium heat for about 2-3 minutes. Pour about ¼ cup of batter for each pancake, cooking until bubbles form, about 2-3 minutes.
- Once cooked, stack pancakes on a plate and enjoy warm with your favorite toppings.
