Step-by-Step Instructions
  1. In a large mixing bowl, whisk together 1 cup of all-purpose flour, 2 tablespoons of granulated sugar, 2 teaspoons of baking powder, and a pinch of salt.
  2. In another bowl, crack open 1 large egg and whisk it until smooth. Add in 1 cup of milk and 1/2 cup of plain Greek yogurt, mixing until creamy.
  3. Pour the wet ingredients into the bowl with the dry ingredients and gently stir until just combined. Do not overmix.
  4. Melt 2 tablespoons of butter and let it cool slightly before folding it into the batter.
