Step-by-Step Instructions for Kofta Curry
- In a large mixing bowl, combine ground beef, grated onion, egg, panko bread crumbs, cilantro, mint, ginger garlic paste, and all spices. Mix well and knead for 2-3 minutes. Let rest for 15 minutes.
- Preheat the broiler to high. Arrange shaped koftas on a baking sheet and broil for 3-5 minutes on each side until browned.
- In a large pot, heat olive oil over medium heat, add chopped onions and sauté until golden brown, about 5-7 minutes. Stir in ginger garlic paste and cook for 2 minutes.
- Add tomato paste and remaining spices, cooking for an additional minute.
- Stir in crushed tomatoes, bring to a simmer, then add yogurt and fenugreek leaves. Cook for 5-7 minutes until thickened.
- Add broiled koftas into the sauce, stir gently, cover and simmer for 10-15 minutes until cooked through.
- Garnish with cilantro and drizzle with cream if desired. Serve warm with rice or naan.

Notes
Ensure koftas are tender and avoid dryness by using enough moisture from onions and yogurt.
