For the Koftas
  • 1 pound Ground Beef 90% lean
  • 1 medium Onion grated
  • 1 large Egg or flaxseed for vegan
  • 1 cup Panko Bread Crumbs or chickpea flour for gluten-free
  • 1/4 cup Cilantro fresh, chopped
  • 1/4 cup Mint fresh, chopped
  • 2 tablespoons Ginger Garlic Paste or minced fresh ginger and garlic
  • 1 teaspoon Garam Masala
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Turmeric
  • 1 teaspoon Paprika
  • 1/2 teaspoon Red Pepper Flakes adjust to taste
  • 1 teaspoon Salt adjust to taste
  • 2 tablespoons Olive Oil or any neutral oil
For the Sauce
  • 2 tablespoons Tomato Paste
  • 1 can Crushed Tomatoes
  • 1 cup Yogurt whipped, full-fat preferred
  • 1 tablespoon Fenugreek Leaves dried if fresh not available
  • 1/2 cup Heavy Cream optional

Method
 

Step-by-Step Instructions for Kofta Curry
  1. In a large mixing bowl, combine ground beef, grated onion, egg, panko bread crumbs, cilantro, mint, ginger garlic paste, and all spices. Mix well and knead for 2-3 minutes. Let rest for 15 minutes.
  2. Preheat the broiler to high. Arrange shaped koftas on a baking sheet and broil for 3-5 minutes on each side until browned.
  3. In a large pot, heat olive oil over medium heat, add chopped onions and sauté until golden brown, about 5-7 minutes. Stir in ginger garlic paste and cook for 2 minutes.
  4. Add tomato paste and remaining spices, cooking for an additional minute.
  5. Stir in crushed tomatoes, bring to a simmer, then add yogurt and fenugreek leaves. Cook for 5-7 minutes until thickened.
  6. Add broiled koftas into the sauce, stir gently, cover and simmer for 10-15 minutes until cooked through.
  7. Garnish with cilantro and drizzle with cream if desired. Serve warm with rice or naan.
