Preparation
  1. Wash and dice the zucchini, onion, and bell pepper into bite-sized pieces. Mince the garlic.
  2. In a large skillet, heat olive oil over medium heat for 1-2 minutes.
  3. Add diced onion and bell pepper. Sauté for 3-4 minutes until the onion is translucent.
  4. Add minced garlic and sauté for 1 additional minute.
  5. Incorporate zucchini, salt, black pepper, and paprika. Cook for 5-7 minutes until tender.
  6. Whisk the eggs in a bowl until frothy.
  7. Pour the whisked eggs over sautéed vegetables and cook for 2 minutes untouched.
  8. Gently stir the eggs into the mixture and cook for an additional 2-3 minutes.
  9. Garnish with fresh herbs and serve hot.
