Baked Protein Breakfast Casserole
- Preheat the oven to 375°F (190°C) and grease a 9x9 inch baking dish.
- In a large mixing bowl, whisk together 8 large eggs, 1 cup of low-fat cottage cheese, 1/2 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper until smooth.
- Fold in 1 cup of diced cooked chicken breast, 1/2 cup of chopped spinach, 1/2 cup of diced bell peppers, 1/4 cup of diced onion, and 1/2 cup of shredded mozzarella cheese.
- Pour the mixture into the prepared baking dish and bake for 30 to 35 minutes until the center is set.
- Let the casserole cool for about 5 minutes, then slice into squares and serve warm.
