  • 2 medium Green Plantains Peeled and sliced
  • 2 cups Vegetable Oil For frying; can use canola or peanut oil
  • 4 cloves Minced Garlic
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black Pepper Adjust to taste
  • 1 teaspoon Ground Cumin Can substitute with coriander
  • 1 cup Chicken Broth Can use vegetable broth for vegetarian version
For the Garlic Lime Shrimp
  • 2 tablespoons Olive Oil Or avocado oil
  • 1 pound Shrimp Juicy and tender
  • 2 tablespoons Fresh Lime Juice Use fresh for best flavor
  • 1 teaspoon Paprika Optional for color
  • 1/2 teaspoon Red Pepper Flakes Optional, adjust for spice preference
For Garnish
  • 1/4 cup Fresh Cilantro Chopped; parsley can be substituted

Method
 

Cooking Steps
  1. In a large pot, heat vegetable oil over medium heat until shimmering, about 5 minutes.
  2. Carefully add the peeled and sliced green plantains to the hot oil, frying for 5 to 7 minutes until golden brown and tender.
  3. In a mixing bowl, combine the fried plantains, minced garlic, salt, black pepper, ground cumin, and chicken broth. Mash until combined yet chunky.
  4. Form the mofongo mixture into small mounds or balls and set aside.
  5. In a skillet, heat olive oil over medium heat. Add shrimp and cook for 2 minutes until pink, then add lime juice, paprika, and red pepper flakes.
  6. To serve, place mofongo mounds on a plate and top with garlic lime shrimp. Garnish with chopped cilantro.
