For the Dressing
  • 1/4 cup Olive oil Extra virgin preferred
  • 2 tablespoons Balsamic vinegar Red wine vinegar is a good alternative
  • 1 teaspoon Salt Kosher or sea salt recommended
  • 1/2 teaspoon Pepper Freshly ground black pepper is best

Method
 

Preparation
  1. In a large mixing bowl, add a generous amount of mixed greens as the base, chop into bite-sized pieces.
  2. Slice cherry tomatoes in half, dice cucumber, thinly slice radishes, and cube avocado.
  3. Sprinkle crumbled goat cheese over the salad mix.
  4. In a small jar, combine olive oil and balsamic vinegar, seasoning with salt and pepper, and shake to emulsify.
  5. Drizzle dressing over the salad, and gently toss to coat.
  6. Serve immediately on chilled plates for freshness.
