- In a medium saucepan, bring 1.5 cups of water to a rolling boil over medium-high heat. Stir in 1 cup of brown sugar and a pinch of salt until fully dissolved.
- Optional: Add 1 teaspoon of vanilla extract to the syrup mixture and allow it to boil for about 10 minutes.
- Carefully add the diagonally cut plantain bananas to the simmering syrup. Cover the saucepan, reduce the heat to low, and let simmer for 10 minutes.
- If using cooked tapioca pearls, stir them in before removing from heat. Allow everything to meld for a couple of minutes.
- Remove from heat and let cool. Serve warm or chilled in bowls.
