- In a large mixing bowl, combine the instant pistachio pudding mix and the entire can of crushed pineapple with juice. Whisk for about 3-5 minutes until glossy.
- Gently fold in the thawed whipped topping with a rubber spatula, being careful not to over-mix. Continue until evenly incorporated, about 2-3 minutes.
- Stir in the chopped pistachios and, if desired, the mini marshmallows or cottage cheese. Ensure even distribution within the mixture.
- Cover the mixing bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the mixture to firm up.
- Once chilled, give the Pistachio Fluff a gentle stir and serve in a lovely dish, garnishing with additional chopped pistachios and maraschino cherries if desired.
