Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease the ramekins with unsalted butter.
  2. Place about 1 ounce of smoked salmon in each ramekin, followed by 1 tablespoon of crème fraîche or sour cream and a teaspoon of fresh dill.
  3. Crack one large egg into each ramekin and pour 1 tablespoon of heavy cream around each egg.
  4. Season with kosher salt and freshly ground black pepper to taste.
  5. Place the ramekins in a baking dish and pour boiling water into the dish until it reaches halfway up the sides of the ramekins.
  6. Bake in the preheated oven for 15 to 20 minutes, aiming for about 15 to 17 minutes for runny yolks.
  7. Carefully remove the ramekins from the oven and serve immediately, optionally with toasted baguette or brioche.
