Preparation
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine cake mix, eggs, oil, and water. Mix on medium speed until smooth, about 2 minutes.
- Line a cupcake tin with liners and fill each about two-thirds full with batter. Bake for 18-21 minutes or until a toothpick comes out clean. Cool for 5 minutes in the tin before transferring to a wire rack.
- While cooling, prepare your frosting. Mix vanilla frosting with pink food coloring until your desired shade is achieved. Frost the cooled cupcakes generously with the pink frosting.
- Sprinkle coconut flakes on top for a grass effect. Cut mini marshmallows in half for ears and use toothpicks to secure them on top of each cupcake.
- Place a jelly bean on top of each cupcake as the bunny's nose.
