Method
 

Step-by-Step Instructions
  1. Preheat the grill to a steady 180°F.
  2. Toss the cleaned mushrooms with olive oil in a large mixing bowl.
  3. Sprinkle onion powder, fine sea salt, and black pepper over the oiled mushrooms and toss gently.
  4. Place the seasoned mushrooms directly on the smoker grates or in a cast-iron grilling pan and smoke for 30 minutes.
  5. Increase the smoker temperature to 475°F for caramelization, then cook until done.
  6. Remove from grill, allow to cool slightly, then serve warm.
