  • 2 cups Salad Macaroni or Ditalini Pasta or any pasta shape you prefer
For the Vegetables
  • 1 cup Tiny Broccoli Florets steamed or raw

For the Dressing
  • 1 cup Mayonnaise or Greek yogurt as a healthier option
  • 2 tablespoons Vinegar White Wine or Plain, or use apple cider vinegar
  • 1 teaspoon Kosher Salt adjust as needed
  • 1/4 teaspoon Freshly Ground Black Pepper or white pepper
  • 1 teaspoon Sugar optional for a lower-sugar salad

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add salad macaroni or ditalini pasta and cook until al dente, about 8-10 minutes.
  2. In the last 30 seconds of cooking, add tiny broccoli florets. Drain and shake gently to remove excess water.
  3. Rinse the pasta and broccoli under cold water to stop the cooking and cool them down.
  4. In a large mixing bowl, whisk together mayonnaise, vinegar, kosher salt, black pepper, and sugar until smooth.
  5. Once cooled, add pasta and broccoli to the dressing and gently mix to coat.
  6. Fold in diced cucumber, red pepper, black olives, and green onion, mixing gently.
  7. Cover and refrigerate for at least 30 minutes before serving.
  8. Stir before serving and adjust seasoning if necessary.
