Method
 

Instructions
  1. Cream together butter, brown sugar, and granulated sugar in a large mixing bowl until light and fluffy, about 3-5 minutes.
  2. Beat in egg and vanilla extract until fully incorporated.
  3. In a separate bowl, whisk together flour, cocoa powder, and salt.
  4. Gradually add dry mixture to wet ingredients while mixing on low speed until just combined.
  5. Fold in freeze-dried strawberries carefully.
  6. Portion out the dough and shape the cookies, pressing together alternating sections of chocolate, vanilla, and strawberry dough.
  7. Refrigerate shaped dough for 30 minutes.
  8. Preheat oven to 350°F (175°C) and bake cookies for 12-15 minutes.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to wire racks.
