Method
 

Step-by-Step Instructions for Sweet Potato Egg Casserole
  1. Preheat your oven to 350°F (175°C).
  2. Chop your sweet potatoes, onion, green pepper, and garlic into small pieces.
  3. Grease a 9×13-inch casserole dish with avocado oil or non-stick spray.
  4. In a large skillet, heat some avocado oil over medium heat. Sauté the chopped sweet potatoes, onion, and green pepper for 8 to 9 minutes until tender.
  5. Remove from heat and spread the sautéed vegetables evenly in the greased casserole dish.
  6. In the same skillet, add the turkey sausage and cook over medium heat until browned, about 5 to 7 minutes.
  7. Mix the cooked sausage with the sautéed vegetables in the casserole dish.
  8. In a separate bowl, whisk together the eggs, milk, thyme, salt, pepper, and shredded cheese until fully combined.
  9. Pour the egg mixture over the vegetable and sausage layer in the casserole dish, stirring slightly.
  10. Bake for 40 to 45 minutes, until the center is set and firm.
  11. Let casserole cool for about 15 minutes before serving.
