Salad
  • 6 cups fresh spinach or baby spinach for added tenderness
  • 1 cup fresh strawberries sliced
  • 1/2 cup mandarin oranges or fresh oranges
  • 1/2 cup fresh blueberries or other seasonal berries
  • 1/4 cup sliced almonds or pecans/walnuts for variation

Preparation Steps
  1. In a blender, combine sugar, apple cider vinegar, poppy seeds, minced onion, paprika, and Worcestershire sauce. Blend on low until well combined, about 20 seconds. Gradually add canola oil while blending for another 30 seconds until emulsified.
  2. In a large salad bowl, add fresh spinach. Slice strawberries and add along with drained mandarin oranges and fresh blueberries.
  3. Sprinkle sliced almonds over the salad. Gently toss the ingredients together.
  4. Just before serving, drizzle the prepared dressing over the salad and toss gently to coat evenly.
