Ingredients
  

For the Pasta
  • 12 ounces Linguine or spaghetti Penne or gluten-free are alternatives.
For the Shrimp
  • 1 pound Large shrimp Peeled and deveined.
For the Sauce
  • 3 tablespoons Olive oil Vegetable oil can be substituted.
  • 4 tablespoons Butter Unsalted is best.
  • 5 cloves Garlic Minced.
  • 0.25 teaspoon Crushed red pepper flakes Optional.
  • 0.5 cup Dry white wine Chicken broth can be used.
  • 2 tablespoons Lemon juice Juice of one lemon.
  • 1 teaspoon Lemon zest Use a microplane for fine zest.
For the Cheese
  • 0.5 cup Parmesan cheese Grated.
  • 1 cup Mozzarella cheese Shredded.
For the Garnish
  • 0.25 cup Fresh parsley Chopped.
  • Salt and Black Pepper To taste.

Method
 

Preparation
  1. Cook pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and toss with olive oil.
  2. In a skillet, heat olive oil and butter. Season and sauté shrimp until pink, about 1-2 minutes per side. Remove and set aside.
  3. In the same skillet, melt remaining butter, sauté garlic and red pepper flakes until fragrant. Add white wine and lemon juice, simmer until thickened.
  4. Combine cooked pasta and shrimp in the skillet, add half the mozzarella and Parmesan, and mix well.
  5. Preheat oven to 375°F (190°C). Transfer mixture to a greased baking dish, top with remaining cheeses, and bake for about 15 minutes until bubbling.
  6. Garnish with parsley and serve warm.
