Ingredients
  

For the Filling
  • 1 pound Lean Ground Beef can substitute with ground turkey
  • 1 cup Diced Yellow Onion or red onion for sharper flavor
  • 1 cup Diced Green Bell Pepper any color bell pepper can be used
  • 2 cloves Chopped Garlic or garlic powder in a pinch
  • 2 cups Shredded Mozzarella Cheese can use cheddar for a sharp twist
  • 1 cup Pepperoni Slices or turkey pepperoni for a healthier option
  • 1/2 cup Crumbled Bacon optional
  • 1 tablespoon Italian Seasoning or a mix of oregano and basil
  • 1 cup Ricotta Cheese or cottage cheese as a lighter substitute
  • 1 cup Pizza Sauce store-bought or homemade
For the Wrappers
  • 6 large Flour Tortillas or whole grain/corn tortillas for variety

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C). Grease a baking sheet lightly.
  2. In a large skillet, brown the lean ground beef for 5-7 minutes until no longer pink. Drain excess fat.
  3. Add the diced yellow onion, diced green bell pepper, and chopped pepperoni to the skillet. Cook for 3-4 minutes until softened.
  4. Stir in the chopped garlic and cook for an additional 2 minutes. Then, add the Italian seasoning.
  5. Remove from heat and fold in the pizza sauce and ricotta cheese. Mix in half of the shredded mozzarella cheese.
  6. Take a tortilla, spoon a generous amount of beef mixture, and roll it up tightly. Place seam-side down in the baking sheet.
  7. Pour remaining pizza sauce over the rolled tortillas, then sprinkle with remaining mozzarella and optional toppings.
  8. Bake for 20-25 minutes until cheese is melted and golden brown.
  9. Let cool for a few minutes before serving. Enjoy with salad or garlic bread.
