Preparation Steps
- If your thick bread isn’t stale, cut it into cubes and spread them on a baking sheet. Bake the bread cubes at 300°F for about 15 minutes until they’re slightly dry and golden.
- Take a 9x13 inch baking pan and generously grease it with non-stick spray or butter. Layer the toasted bread cubes in the pan.
- In a large measuring cup, combine applesauce or mashed banana, your chosen milk, and egg whites (or additional milk). Add maple syrup and pure vanilla extract. Whisk everything together until smooth.
- Evenly pour the mixture over the bread cubes in the baking pan and press down the bread into the liquid.
- Spread your choice of fresh or thawed berries on top of the bread mixture and cover the pan tightly with plastic wrap.
- Place the covered casserole in the refrigerator and let it sit overnight.
- The next morning, preheat your oven to 350°F.
- Uncover the casserole and bake it in the preheated oven for about 1 hour, or until it’s lightly golden on top and set in the center.
- After baking, allow the casserole to cool for about 10 minutes before slicing. Serve warm or at room temperature.
