For the Meatloaf
  • 1 cup Brown Lentils Can substitute with green lentils
  • 2 cups Water For cooking lentils
  • 1 tbsp Olive Oil Can be swapped with any neutral oil or butter
  • 1 medium Onion (Chopped) For depth of flavor
  • 3 cloves Garlic (Minced) Can substitute with garlic powder
  • 1 medium Carrot (Diced) Can also use parsnip or bell pepper
  • 1 stalk Celery (Diced) Can swap with leeks or more carrots
  • 1 cup Rolled Oats For a gluten-free option, use instant oats
  • 1 cup Breadcrumbs Use gluten-free breadcrumbs if preferred
  • 1 flax egg Flax Egg 2 tbsp ground flaxseed + 1/4 cup water
  • 2 tbsp Soy Sauce Tamari or coconut aminos are good substitutes
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Thyme Optional substitutes: oregano or Italian seasoning
  • 1 tsp Smoked Paprika Use regular paprika if needed
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste
  • 1/2 cup Ketchup Can use BBQ sauce as an alternative
  • 2 tbsp Maple Syrup Substitute: agave syrup or brown sugar
  • 1 tbsp Balsamic Vinegar Can substitute with apple cider vinegar

Method
 

Step-by-Step Instructions
  1. In a medium saucepan, combine brown lentils with enough water to cover them by about an inch. Bring to a boil, then simmer for 25-30 minutes until tender. Drain and set aside.
  2. Heat olive oil in a skillet, add onion, garlic, carrot, and celery. Sauté for 5-7 minutes until vegetables soften.
  3. In a mixing bowl, mash cooked lentils with a fork. Add the sautéed vegetables, oats, breadcrumbs, and flax egg. Stir in soy sauce, tomato paste, thyme, smoked paprika, salt, and pepper. Shape into a loaf and place in a lined loaf pan.
  4. In a small bowl, whisk together ketchup, maple syrup, and balsamic vinegar. Spread glaze over the top of the loaf.
  5. Preheat oven to 375°F (190°C). Bake loaf for 45-50 minutes until golden brown. Let cool for 10-15 minutes before slicing.
