Step-by-Step Instructions
  1. Preheat your oven broiler to 450°F (232°C), positioning the oven rack about 6 inches from the broiler.
  2. Prepare the corn by husking ears or draining canned corn to yield about 3 cups of sweet corn.
  3. In a large mixing bowl, combine corn, cayenne pepper, Kewpie mayonnaise, sugar, salt, and black pepper until thoroughly mixed.
  4. Heat a skillet over medium heat, add butter, and once melted, pour in the corn mixture. Cook for 5 to 7 minutes, stirring occasionally.
  5. Remove the skillet from heat and fold in chopped green onions.
  6. Sprinkle shredded mozzarella evenly over the corn mixture and place under the broiler for 2 to 3 minutes until bubbly and golden.
