Ingredients
  

For the Pasta
  • 8 oz Rotini Pasta Substitute with any desired pasta shape
For the Protein
  • 6 oz Salami Can be replaced with pepperoni or turkey slices
For the Veggies
  • 1 cup Cherry Tomatoes Standard tomatoes can be used if halved
  • 1 cup English Cucumber Any cucumber variety or zucchini can be used
  • 1/2 cup Red Onion Substituting with green onions will provide a milder flavor
  • 1 cup Roasted Red Peppers Homemade or jarred are both acceptable
  • 1/4 cup Parsley Basil can be a flavorful alternative
For the Cheese
  • 8 oz Fresh Mozzarella Can be swapped for crumbled feta
For the Olives
  • 1/2 cup Black Olives Use green olives or omit if not preferred
  • 1/2 cup Kalamata Olives Regular black olives can be substituted
For the Dressing
  • 1/2 cup Italian Dressing Homemade or store-bought options work

Method
 

Directions
  1. Cook the pasta in a large pot of salted water until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. While the pasta cooks, chop the vegetables and slice the salami. Gather all prepped ingredients.
  3. Combine dressing ingredients in a small bowl or jar. Shake or whisk until combined.
  4. In a large mixing bowl, combine cooled rotini, salami, vegetables, olives, and mozzarella. Pour dressing over and toss to combine.
  5. Chill in the refrigerator for 1-3 hours before serving for best flavor.
