Method
 

Nougat Preparation
  1. In a medium saucepan, combine granulated sugar, corn syrup, honey, and water. Heat over medium heat, stirring continuously until the mixture comes to a gentle boil and the sugar is fully dissolved, about 5 minutes.
  2. Remove the saucepan from heat and carefully stir in the egg whites, salt, and vanilla extract. Whisk thoroughly until everything is combined and the mixture is smooth; let it cool for about 5 minutes.
  3. In a large mixing bowl, add your chopped nuts and dried fruits and stir well to ensure even distribution.
  4. Pour the warm sugar mixture over the nut and fruit combination. Gently fold the mixture until all ingredients are well-coated and incorporated.
  5. Line a baking dish with parchment paper. Transfer the nougat mixture into the prepared dish, spreading it evenly and pressing down firmly.
  6. Allow the nougat candy to cool at room temperature for at least 1 hour, then lift it from the dish using the parchment overhang and cut it into bars.
