Instructions
  1. Begin by preparing the chicken and corn. Cut the chicken breasts into uniform bite-sized cubes. If using fresh corn, cut the kernels off the cob.
  2. Heat olive oil in a large skillet over medium heat for about 2 minutes. Add the chicken cubes seasoned with salt, pepper, smoked paprika, chili powder, and garlic powder. Sauté for 6–8 minutes until cooked through.
  3. Stir in the corn and sauté for an additional 2–3 minutes until warmed.
  4. In a separate bowl, combine Greek yogurt, mayonnaise, minced garlic, and lime juice and zest. Mix well until smooth.
  5. Gently stir cooked rice into the chicken and corn mixture and squeeze lime juice over the top.
  6. Scoop into serving bowls and garnish with sliced red onion, cilantro, and drizzle with the creamy garlic sauce.
