Ingredients
  

For the Meatballs
  • 1 lb Ground Beef or ground lamb or turkey
  • 2 cloves Garlic minced
  • 1 medium Onion blended
  • 1 cup Breadcrumbs gluten-free optional
  • 1 tsp Baking Soda
  • 1/4 cup Fresh Herbs parsley, mint, coriander
  • 2 tbsp Olive Oil or avocado oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
For the Roasted Potatoes
  • 2 large Potatoes cut into wedges
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Dried Oregano
For the Tzatziki Sauce
  • 1 cup Thick Greek Yogurt or plain yogurt
  • 1 small Cucumber grated
  • 2 tbsp Lemon Juice or red wine vinegar
  • 2 tbsp Fresh Dill or mint
For the Salad
  • 2 cups Crisp Lettuce
  • 1 cup Tomatoes diced
  • 1 cup Cucumbers sliced
  • 1/2 medium Red Onion sliced
  • 1/2 cup Kalamata Olives pitted

Method
 

Preparation
  1. Combine ground beef, minced garlic, blended onions, breadcrumbs, baking soda, fresh herbs, olive oil, salt, and black pepper in a large mixing bowl. Mix until integrated. Cover and refrigerate for 2 hours.
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Shape the meat mixture into meatballs, arrange them on the baking sheet.
  3. Bake the meatballs for 30-40 minutes, turning halfway through for even browning.
  4. Prepare potato wedges by tossing with olive oil, cumin, paprika, and oregano. Spread on another sheet and roast for 40-60 minutes, flipping halfway.
  5. Combine Greek yogurt, grated cucumber, lemon juice, fresh dill, and olive oil in a bowl until smooth. Chill for at least 10 minutes.
  6. Assemble the bowl with crisp lettuce, salad mix, roasted potatoes, meatballs, and tzatziki sauce on top.
