- Combine ground beef, minced garlic, blended onions, breadcrumbs, baking soda, fresh herbs, olive oil, salt, and black pepper in a large mixing bowl. Mix until integrated. Cover and refrigerate for 2 hours.
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Shape the meat mixture into meatballs, arrange them on the baking sheet.
- Bake the meatballs for 30-40 minutes, turning halfway through for even browning.

- Combine Greek yogurt, grated cucumber, lemon juice, fresh dill, and olive oil in a bowl until smooth. Chill for at least 10 minutes.
- Assemble the bowl with crisp lettuce, salad mix, roasted potatoes, meatballs, and tzatziki sauce on top.
