Method
 

Marinade and Tzatziki Preparation
  1. In a mixing bowl, whisk together olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and pepper. Add chicken thighs, cover, and refrigerate for at least 30 minutes or up to 4-8 hours.
  2. Prepare tzatziki by salting the grated cucumber and letting it sit for 10 minutes. Squeeze excess liquid, then combine with yogurt, garlic, lemon juice, dill or mint, and salt. Mix and refrigerate for at least 30 minutes.
Cooking and Assembly
  1. Preheat grill or skillet over medium-high heat. Grill chicken for 5-7 minutes per side until the internal temperature reaches 165°F, or bake at 425°F for 18-22 minutes.
  2. Warm pita bread on the grill or in the oven. This ensures they don’t tear when filled.
  3. Assemble gyros by spreading tzatziki on a warm pita, adding sliced chicken, cherry tomatoes, red onion, lettuce, and feta. Fold and serve.
