  • 1/2 cup green bell pepper, chopped Substitution: Try sliced avocados or omit if you're not a fan.
  • 1/2 cup black olives, chopped Substitution: Red onions can give a different flavor profile.
  • 1 cup cherry or grape tomatoes, halved Any variety of tomatoes works beautifully here.

Equipment

  • mason jar
  • Large skillet
  • large bowl

Method

Step-by-Step Instructions
  1. In a mason jar, combine vinegar, olive oil, ketchup, honey, Worcestershire sauce, paprika, onion powder, and garlic powder. Secure the lid tightly and shake vigorously until well mixed. Refrigerate the dressing for at least 30 minutes.
  2. Heat a large skillet over medium-high heat and add ground beef (or ground turkey). Brown the meat for 5-7 minutes, breaking it apart as it cooks. Once fully cooked, drain excess grease and stir in taco seasoning with a splash of water. Simmer for an additional 5-7 minutes and remove from heat to cool.
  3. Chop lettuce into bite-sized pieces and place in a large bowl. Dice green bell pepper, slice black olives, and halve cherry or grape tomatoes. Add these vegetables to the bowl.
  4. Drain and rinse corn and black beans. Incorporate them into the bowl with veggies and toss gently.
  5. Once meat has cooled, add it to the bowl with vegetables and sprinkle cheese over the top. Fold gently to combine.
  6. Before serving, add crushed nacho cheese Doritos and drizzle with homemade Catalina dressing. Toss lightly to coat all ingredients evenly.
