For the Dressing
  • 2 tablespoons honey or agave syrup/maple syrup for vegan option
  • 2 cloves garlic crushed, fresh preferred
  • 3 tablespoons red wine vinegar or apple cider vinegar as substitute
  • 1 teaspoon oregano can substitute with dried Italian seasoning
  • 4 tablespoons olive oil or avocado oil for different flavor

For the Caviar Base
  • 1 can black-eyed peas rinsed and drained
  • 1 can black beans drained
  • 1 medium red onion finely chopped
  • 1 medium bell pepper diced, any color
  • 1 cup corn canned, frozen, or cooked fresh
  • 1 medium jalapeño minced, remove seeds for less heat
  • 2 medium tomatoes diced, prefer vine-ripened
  • cilantro omit if disliked or use parsley

Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together honey, crushed garlic, red wine vinegar, oregano, and olive oil. Season with salt and pepper to taste until well combined.
  2. In a large mixing bowl, combine black-eyed peas, black beans, red onion, bell pepper, corn, minced jalapeño, and diced tomatoes. Toss gently to mix.
  3. Pour the dressing over the mixture and toss until all ingredients are well coated.
  4. Cover and chill for at least 30 minutes to enhance flavors.
  5. Serve with tortilla chips or use as a topping for tacos.
