  • 1 cup Coconut Milk (Cream Only) Use the thick cream from the top of the can.
  • 1 cup Almond Milk Can be substituted with any milk alternative.
  • 2 tablespoons Honey Maple syrup or agave can be used for a different taste.
  • 2 tablespoons Lime Juice Fresh lime is preferred.
  • 1 teaspoon Vanilla Vanilla extract is highly recommended.
Optional Ingredients
  • 1 tablespoon Cornstarch Mix with water to form a slurry.
  • 2 tablespoons Shredded Coconut Using unsweetened shredded coconut is preferred.

Method
 

Step‑by‑Step Instructions
  1. Blend the frozen mango, coconut cream, almond milk, honey, lime juice, and vanilla extract in a blender until smooth.
  2. Pour the blended mixture into popsicle molds, leaving space at the top for expansion. Insert popsicle sticks and place molds on a tray.
  3. Freeze for at least 6 hours or overnight until solid.
  4. Remove popsicles from molds by running under warm water for a few seconds. Optionally, sprinkle with shredded coconut and refreeze for a few minutes.
