  • 1/4 cup mayonnaise use low-fat for a lighter option
  • 1 teaspoon onion powder sub garlic powder if desired
  • 2 tablespoons lime juice fresh lime juice is best
For the Roll-Ups
  • 2 medium English cucumbers select straight ones
  • 1/2 cup whipped cream cheese use low-fat if desired
  • 1 tablespoon everything bagel seasoning optional

Step-by-Step Instructions
  1. Start by shredding the cooked chicken, which can be rotisserie or leftover from a previous meal.
  2. Dice the red onion finely, then soak it in water for about 10 minutes. Drain thoroughly after soaking.
  3. In a mixing bowl, combine the shredded chicken, drained red onion, chopped cilantro, and cubed avocado.
  4. In a separate bowl, prepare the dressing by blending the drained cottage cheese, mayonnaise, onion powder, lime juice, and some salt and pepper.
  5. Thinly slice the English cucumbers to about 1/8 inch. Pat the slices dry with paper towels.
  6. Spread a layer of whipped cream cheese over each cucumber slice. Add a generous amount of the chicken salad at one end.
  7. Starting from the end with the filling, roll the cucumber slice tightly.
  8. Top your roll ups with everything bagel seasoning and serve immediately for the freshest results.
