- Start by shredding the cooked chicken, which can be rotisserie or leftover from a previous meal.
- Dice the red onion finely, then soak it in water for about 10 minutes. Drain thoroughly after soaking.
- In a mixing bowl, combine the shredded chicken, drained red onion, chopped cilantro, and cubed avocado.
- In a separate bowl, prepare the dressing by blending the drained cottage cheese, mayonnaise, onion powder, lime juice, and some salt and pepper.
- Thinly slice the English cucumbers to about 1/8 inch. Pat the slices dry with paper towels.
- Spread a layer of whipped cream cheese over each cucumber slice. Add a generous amount of the chicken salad at one end.
- Starting from the end with the filling, roll the cucumber slice tightly.
- Top your roll ups with everything bagel seasoning and serve immediately for the freshest results.
