  • 1/4 cup Brown Sugar Coconut sugar can be used as a substitute.
  • 2 tablespoons Vegetable Oil Olive oil is a tasty substitute.
  • 1/4 cup Fresh Orange Juice Fresh lemon juice can also work.
  • 2 tablespoons Lime Juice Fresh lime juice is preferred.
  • 2 cloves Garlic, minced Garlic powder can be substituted if necessary.
  • 1 teaspoon Dried Thyme Oregano can be used instead.
  • 1 teaspoon Minced Ginger Fresh ginger will enhance flavor.
For the Glaze
  • 1 teaspoon Rum Extract Real rum can be used for authenticity.
  • 1/2 teaspoon Allspice Pumpkin pie spice can work as a substitute.
  • 1/4 teaspoon Cayenne Pepper Adjust according to spice preference.
  • 2 pieces Bay Leaves Remove before cooking.
  • 1/2 cup Honey Maple syrup can be used instead.
  • 2 tablespoons Orange Juice Fresh is always better.
  • 1 teaspoon Lime Zest
  • 1 teaspoon Orange Zest
  • 1/8 teaspoon Ground Ginger
  • 1/8 teaspoon Cayenne Pepper Provides a harmonious flavor.

Method
 

Preparation of Caribbean Chicken
  1. In a mixing bowl, whisk together the brown sugar, vegetable oil, fresh orange juice, lime juice, minced garlic, dried thyme, and minced ginger. Pour over the chicken in a resealable bag, seal, and refrigerate for at least 4 hours, ideally overnight.
  2. Preheat your grill to medium-high heat (375°F to 400°F). Remove chicken from marinade, discard the marinade, and let any excess drip off.
  3. Grill the marinated chicken for about 5 minutes on one side, flip, and grill for another 5 minutes or until the internal temperature reaches 165°F.
  4. In a separate bowl, combine honey, orange juice, lime zest, orange zest, ground ginger, and cayenne pepper. Microwave for about 30 seconds, then stir in rum extract.
  5. Drizzle the warm glaze over the grilled chicken before serving. Arrange on a platter and enjoy!
