Preparation of Caribbean Chicken
- In a mixing bowl, whisk together the brown sugar, vegetable oil, fresh orange juice, lime juice, minced garlic, dried thyme, and minced ginger. Pour over the chicken in a resealable bag, seal, and refrigerate for at least 4 hours, ideally overnight.
- Preheat your grill to medium-high heat (375°F to 400°F). Remove chicken from marinade, discard the marinade, and let any excess drip off.
- Grill the marinated chicken for about 5 minutes on one side, flip, and grill for another 5 minutes or until the internal temperature reaches 165°F.
- In a separate bowl, combine honey, orange juice, lime zest, orange zest, ground ginger, and cayenne pepper. Microwave for about 30 seconds, then stir in rum extract.
- Drizzle the warm glaze over the grilled chicken before serving. Arrange on a platter and enjoy!
