Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease the cake pan with olive oil.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, sugar, salt, espresso powder, and baking soda.
  3. Add the brewed coffee, olive oil, vanilla extract, and apple cider vinegar to the dry ingredients and whisk gently.
  4. Pour the batter into the prepared cake pan and bake for about 28-32 minutes.
  5. Once baked, cool the cake in the pan for 10 minutes, then invert onto a cooling rack.
  6. Prepare the ganache by heating the heavy cream until steaming, then pour it over the chopped chocolate and whisk until smooth.
  7. Once the cake is cool, glaze it with the ganache.
