Preparation Steps
- Chop the bittersweet chocolate into small pieces and melt it in a microwave-safe bowl or double boiler.
- In a large mixing bowl, beat the eggs and granulated sugar on high speed for 2-3 minutes until frothy and pale yellow.
- Gently fold melted chocolate into the egg mixture without deflating the eggs to form a smooth batter.
- Preheat oven to 350°F (175°C) and grease ramekins. Fill each with batter about 3/4 full and tap to release air bubbles.
- Bake in the preheated oven for about 25 minutes until the edges pull away and tops are matte.
- Allow the cakes to cool for about 10 minutes before inverting onto plates. Serve warm or chilled with toppings.
