Preparation Steps
- Preheat your oven to 170ºC (340ºF) and prepare three 20 cm (8-inch) round baking pans by lining the bottoms with parchment paper.
- In a large mixing bowl, whisk together the all-purpose flour, cornstarch, granulated sugar, dark brown sugar, unsweetened cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix together the black coffee, vegetable oil, sour cream, eggs, and vanilla extract until well combined.
- Gradually pour the wet ingredients into the dry mixture, gently folding them together until just combined.
- Divide the batter evenly among the prepared pans and bake for 28-30 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for about 10 minutes before transferring to a wire rack.
- While the layers cool, whip the room-temperature butter until light and fluffy, then gradually mix in the powdered sugar, vanilla extract, and cooled black coffee.
- Once the cakes are cool, level the tops if necessary and frost with the coffee buttercream, layering as you go.
