Preparation Steps
  1. Preheat your oven to 170ºC (340ºF) and prepare three 20 cm (8-inch) round baking pans by lining the bottoms with parchment paper.
  2. In a large mixing bowl, whisk together the all-purpose flour, cornstarch, granulated sugar, dark brown sugar, unsweetened cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix together the black coffee, vegetable oil, sour cream, eggs, and vanilla extract until well combined.
  4. Gradually pour the wet ingredients into the dry mixture, gently folding them together until just combined.
  5. Divide the batter evenly among the prepared pans and bake for 28-30 minutes or until a toothpick comes out clean.
  6. Let the cakes cool in the pans for about 10 minutes before transferring to a wire rack.
  7. While the layers cool, whip the room-temperature butter until light and fluffy, then gradually mix in the powdered sugar, vanilla extract, and cooled black coffee.
  8. Once the cakes are cool, level the tops if necessary and frost with the coffee buttercream, layering as you go.
