Ingredients
  

For the Cherry Base
  • 2 cups pitted cherries Fresh or frozen; reduce water if using frozen.
  • 1 cup water Adjust if using frozen cherries.
  • 1/2 cup granulated sugar Adjust to taste.
  • 2 tablespoons lemon juice Freshly squeezed is preferred.
For the Mascarpone Filling
  • 1 cup heavy cream Double cream is an alternative.
  • 8 oz mascarpone cheese Use full-fat for best results.
  • 1 teaspoon vanilla extract
For Soaking
  • 1 cup brewed coffee Strong coffee or espresso can be used.
  • 1/2 cup cherry amaretto Can swap with other spirits or omit.
  • 24 pieces ladyfingers Quickly dip in coffee mixture.
Optional Topping
  • 1 cup optional cherry sauce Made with additional cherries and sugar.
  • 1 cup fresh cherries For garnish.
  • 1/4 cup chocolate flakes For garnish.

Method
 

Step-by-Step Instructions
  1. In a medium pot, combine pitted cherries and enough water to cover them. Bring to a boil, mash, and simmer for 15 minutes. Strain juice and mix in lemon juice and sugar. Cool completely.
  2. In a mixing bowl, whip heavy cream until stiff peaks form. Fold in mascarpone, sugar, and vanilla until smooth.
  3. In a shallow bowl, combine brewed coffee and cherry amaretto. Allow to cool slightly.
  4. Dip ladyfingers in the coffee mixture for about 10 seconds and layer half in a rectangular dish.
  5. Spread half of the mascarpone mixture over soaked ladyfingers.
  6. Repeat with remaining ladyfingers and mascarpone filling. Smooth layers.
  7. Cover with plastic wrap and chill for at least 6 hours or overnight.
  8. Optional: Simmer additional cherries with sugar and water for 10 minutes to prepare cherry sauce.
  9. Before serving, drizzle cherry sauce over chilled tiramisu and garnish with cherries and chocolate flakes.
