- Wash and dry two medium-sized cucumbers thoroughly. Slice them thinly, about 1/8 inch thick.
- In a mixing bowl, combine 4 ounces of softened cream cheese and 2 tablespoons of unsalted butter. Blend until smooth.
- Lay out 8 slices of bread and spread the cream cheese mixture on one side of each slice.
- Place the thinly sliced cucumbers evenly over half of the bread slices.
- Take the remaining bread slices and place them on top, spread side down. Press gently to adhere.
- Trim the crusts and cut each sandwich into quarters or triangles, then serve immediately.
