- In a large bowl, combine diced sirloin steak with kosher salt and black pepper. Toss thoroughly to coat each piece.
- Heat a skillet over medium-high heat and drizzle in olive oil. Sear the seasoned steak for 2-3 minutes on each side until browned, then transfer to the Crockpot.
- Add sliced sweet onions and minced garlic to the Crockpot. Stir gently to combine with the beef.
- Pour unsalted beef stock over the mixture in the Crockpot. Sprinkle au jus gravy mix on top evenly.
- Slice unsalted butter and lay it on top of the steak mixture.
