Step‑by‑Step Instructions
  1. Prepare the loaf pan by spraying it with non-stick cooking spray and placing it inside a 6-quart or larger slow cooker.
  2. In a large mixing bowl, combine the ground beef, eggs, crushed pork rinds, Parmesan cheese, diced onion, kosher salt, and garlic powder. Mix gently until thoroughly blended.
  3. Fold in the diced cheddar cheese, ensuring it's distributed evenly without breaking down the mixture.
  4. Transfer the mixture into the loaf pan and shape it into a loaf. Spread a layer of low sugar ketchup on top.
  5. Create foil handles for easy lifting. Ensure everything is secure in the slow cooker.
  6. Cover and cook on low for 8 hours or on high for 4 to 6 hours until the internal temperature reaches 160°F (72°C).
  7. Carefully lift the loaf pan out using the foil handles and let the meatloaf rest for 10 minutes before slicing.
