Ingredients
  

For the Fritter Base
  • 2 medium Zucchini Grated and salted
  • 1 teaspoon Salt For drawing out moisture
  • 2 large Eggs Beaten
  • 1 cup Chickpea Flour Substitute with oat flour if preferred
  • 0.5 cup Parmesan Grated, or nutritional yeast for dairy-free
  • 2 cloves Garlic Freshly minced
  • 1 pinch Black Pepper
  • 1 teaspoon Onion Powder
  • 0.25 cup Fresh Parsley Finely chopped
Optional Extras
  • 1 small Red Onion Chopped, optional
  • 1 medium Shredded Carrot Optional for sweetness

Method
 

Step-by-Step Instructions
  1. Grate the zucchini and sprinkle salt over it. Let it sit in a colander for 10 minutes to draw out moisture.
  2. Preheat the air fryer to 200°C (390°F) for 5 minutes.
  3. In a bowl, mix drained zucchini, eggs, chickpea flour, Parmesan, garlic, black pepper, onion powder, and parsley until a thick batter forms.
  4. Lightly spray the air fryer basket with olive oil. Shape batter into patties and place in the basket with space in between.
  5. Spray tops of the fritters with olive oil and air fry for 10-12 minutes. Flip and cook for another 8 minutes until golden.
  6. Let fritters rest for 2 minutes before serving.

Notes

Drain zucchini well to ensure crispy fritters. Cook in batches in the air fryer and adjust consistency of batter if needed by adding flour.
