- Grate the zucchini and sprinkle salt over it. Let it sit in a colander for 10 minutes to draw out moisture.
- Preheat the air fryer to 200°C (390°F) for 5 minutes.
- In a bowl, mix drained zucchini, eggs, chickpea flour, Parmesan, garlic, black pepper, onion powder, and parsley until a thick batter forms.
- Lightly spray the air fryer basket with olive oil. Shape batter into patties and place in the basket with space in between.
- Spray tops of the fritters with olive oil and air fry for 10-12 minutes. Flip and cook for another 8 minutes until golden.
- Let fritters rest for 2 minutes before serving.
