Fritters Preparation
- Begin by finely chopping the shrimp until you have a coarse texture. In a mixing bowl, combine the chopped shrimp with fresh herbs, all-purpose flour, beaten egg, and seasonings. Mix until a cohesive batter forms.
- Using a spoon or your hands, scoop portions of the shrimp mixture and shape into small patties, about 2-3 inches in diameter. Place the fritters on a plate, ready for frying.
- In a large skillet, add enough oil to cover the bottom by about 1/4 inch. Heat the oil over medium-high heat until shimmering.
- Carefully lower a few fritters into the hot oil, frying each side for about 3-4 minutes or until golden brown. Remove from the oil and drain on paper towels.
- While frying, whisk together fish sauce, lime juice, sugar, and water in a small bowl until the sugar dissolves. Adjust sweetness or acidity to taste.
- Serve the fritters warm alongside the Nuoc Cham dipping sauce on a platter.
