Ingredients

For the Fritters
  • 1 pound shrimp, peeled Fresh or frozen
  • 1 cup herbs (cilantro, mint) Substitute with any fresh herbs you enjoy
  • 1 cup all-purpose flour Consider gluten-free flour for dietary needs
  • 1 large egg Acts as a binder; use flaxseed meal mixed with water for vegan
For the Nuoc Cham Dipping Sauce
  • 3 tablespoons fish sauce Imparts umami flavor; use soy sauce for vegetarian
  • 2 tablespoons lime juice Substitute with lemon juice if preferred
  • 1 tablespoon sugar Use any granulated sweetener if preferred
  • 1/2 cup water To dilute the sauce

Equipment

  • Large skillet
  • Mixing bowl
  • Spoon or hands for shaping

Method

Fritters Preparation
  1. Begin by finely chopping the shrimp until you have a coarse texture. In a mixing bowl, combine the chopped shrimp with fresh herbs, all-purpose flour, beaten egg, and seasonings. Mix until a cohesive batter forms.
  2. Using a spoon or your hands, scoop portions of the shrimp mixture and shape into small patties, about 2-3 inches in diameter. Place the fritters on a plate, ready for frying.
  3. In a large skillet, add enough oil to cover the bottom by about 1/4 inch. Heat the oil over medium-high heat until shimmering.
  4. Carefully lower a few fritters into the hot oil, frying each side for about 3-4 minutes or until golden brown. Remove from the oil and drain on paper towels.
  5. While frying, whisk together fish sauce, lime juice, sugar, and water in a small bowl until the sugar dissolves. Adjust sweetness or acidity to taste.
  6. Serve the fritters warm alongside the Nuoc Cham dipping sauce on a platter.
