Step-by-Step Instructions
  1. Prep Zucchini: Grate zucchini, sprinkle with salt, and let sit for 5 minutes. Squeeze out excess moisture with a kitchen towel.
  2. Mix Ingredients: In a bowl, combine squeezed zucchini, corn, egg, flour, chives, salt, and pepper. Stir gently until just combined.
  3. Heat Oil: In a skillet, add enough oil to cover the bottom and heat to 350°F (175°C).
  4. Fry Fritters: Drop spoonfuls of batter into hot oil. Fry for 3-4 minutes per side until golden brown.
  5. Drain: Remove fritters with a slotted spoon and place on paper towels to drain excess oil.
