  • 1 pound shrimp, peeled and deveined Fresh or frozen
  • 1 cup breadcrumbs Use gluten-free for GF option
  • 1 large egg Acts as a binder
  • 1/2 cup mayonnaise Substitute Greek yogurt for lighter option
  • 2 tablespoons lemon juice Fresh is best
  • 1 teaspoon garlic powder Can substitute with fresh garlic
  • 1 small onion (optional) Leeks or shallots can be alternatives
  • to taste salt & pepper Essential for flavor
For the Lemon Aioli
  • 1/2 cup mayonnaise Your favorite brand
  • 1 tablespoon lemon juice Fresh juice is always best
  • 1 teaspoon lemon zest For added flavor

Method
 

Preparation
  1. Finely chop the shrimp and mix with breadcrumbs, egg, mayonnaise, lemon juice, garlic powder, and optional onions.
  2. Shape the mixture into patties, about 3 inches in diameter, and place on a lined baking sheet.
  3. Refrigerate patties for 20-30 minutes to help firm up the texture.
Cooking
  1. Heat oil in a skillet over medium heat until shimmering.
  2. Fry the shrimp cakes for 3-4 minutes on each side until golden brown.
Lemon Aioli
  1. Combine mayonnaise, fresh lemon juice, and lemon zest in a small bowl and whisk until smooth.
Serving
  1. Remove shrimp cakes from the skillet and place on a paper towel-lined plate to drain.
  2. Serve warm with lemon aioli on the side or drizzled on top.
