Step‑by‑Step Instructions
  1. Prepare the Filling: Cook vermicelli noodles, then drain and rinse. Mix with vegetables, herbs, and proteins in a bowl.
  2. Soak Rice Paper: Immerse one rice paper wrap in warm water for 15-20 seconds until pliable, then lay on a towel.
  3. Assemble Rolls: Place 2 tablespoons of filling on rice paper, fold sides, and roll tightly. Repeat with remaining ingredients.
  4. Fry: Heat oil to 180°C, fry rolls in batches for 2-3 minutes until golden brown, then drain on paper towels.
  5. Make Dipping Sauce: Whisk all sauce ingredients together in a bowl, adjusting for taste.
