Ingredients
  

For the Filling
  • 1 cup chopped corned beef can substitute pastrami
  • 1 cup drained sauerkraut rinse and drain well
  • 1 cup shredded Swiss cheese can substitute provolone
  • 4 oz cream cheese softened, or use Neufchâtel for lower fat
  • 2 tbsp Dijon mustard or yellow mustard for a milder flavor
For the Coating
  • 1 cup flour can use gluten-free flour
  • 2 large eggs beaten, or use flaxseed meal and water for vegan
  • 1 cup breadcrumbs opt for panko for extra crunch
For Frying
  • 2 cups vegetable oil can use peanut oil
For the Dipping Sauce
  • 1 cup mayonnaise can use Greek yogurt instead
  • 2 tbsp ketchup or chili sauce for a spicier version
  • 2 tbsp pickle relish or finely chopped dill pickles
  • 1 tsp hot sauce adjust to taste
  • 1 tsp smoked paprika can be omitted if not available

Method
 

Preparation
  1. In a large mixing bowl, combine chopped corned beef, drained sauerkraut, shredded Swiss cheese, softened cream cheese, and Dijon mustard. Mix until well blended. Cover and refrigerate for 30 minutes.
  2. Roll mixture into 1-inch balls and place on a lined baking sheet. Refrigerate for an additional 15 minutes.
  3. Prepare a breading station with three bowls: flour, beaten eggs, and breadcrumbs.
  4. Coat each ball in flour, then dip in eggs, and finally coat in breadcrumbs. Return to the baking sheet.
  5. Heat vegetable oil in a skillet to 350°F (175°C) and fry the balls in batches for 2-3 minutes until golden brown.
  6. Transfer fried balls to a paper towel-lined plate to drain. Prepare the Spicy Thousand Island dipping sauce by whisking together all sauce ingredients.
  7. Serve the crispy Reuben Balls warm with the spicy dipping sauce.
